It’s the New Year (happy 2011 to you!): a time of being encouraged to start fresh, shape up, slim down, and stick to it (whatever it is for you). I’m less a fan of New Years resolutions and the hype surrounding its message of reinvention than my fellow friends. Suddenly shedding the warmth and comfort of the holidays for a lean, mean lemonade-drinking January just doesn’t get me all that excited. Know what I mean?
I’d prefer to think of the New Year as a time to really love my life and take stock of its many pockets of wonderfulness: good people, great town, sweet dog, health, happiness—the whole story. One little pocket of my life that could use a bit more love, though, is my cooking. Don’t get me wrong: I love to cook and bake and treat others to delicious meals whenever I have the chance. I don’t, however, spend as much time creating deliciousness for myself. Scrambled eggs for one and the occasional bowl of kale are fine by me, thanks.
So in an attempt to both relish the life I lead and embrace the start-something-new spirit of the New Year, I “resolve” to spruce up my own meals a bit, thanks to the supremo vegetarian dishes featured on the following oh-so-talented food blogs. (And may I just say to you delightful, extraordinary bloggers: please feel free to invite me to your table for any of these gorgeous meals. I will bring you a bottle of wine and I will help wash dishes.)
